These Mini Apple Pancakes are like tiny apple slices covered in pancake batter, cooked until golden, and then you can add powdered sugar or syrup on top!
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Serving: 15 Pancakes
Ingredients
- 1 cup (120g) all-purpose flour
- 1 Tbsp granulated sugar
- ½ tsp baking powder
- ½ tsp salt
- 1 large egg
- 1 cup (240 ml) whole milk or 2%
- 1 tsp vegetable oil
- 5 (5) apples peeled and thinly sliced or shredded
- Powdered sugar for serving
Instructions
- In one bowl, mix together flour, sugar, baking powder, and salt.
- In another bowl, whisk the egg, then add milk and oil. Pour this into the dry ingredients and stir until it’s smooth. Add the apples and mix.
- Pour about ½ cup of the batter onto a greased hot pan, spreading it to make a 5-inch circle. Flip it when bubbles form. Cook the other side until it’s golden brown and the apples are tender.
- If you like, sprinkle powdered sugar on top.
Notes:
- Cut the apples into thin slices, or you can use grated apples.
- Try using pears or peaches instead of apples if you want to change it up.
