Peach Cobbler

Ingredients
- 8 (around 2 pounds) fresh peaches, peeled, cored, and sliced
- 2 tbsp granulated sugar
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ⅛ tsp ground nutmeg
- pinch of salt
- ½ cup butter, melted
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350˚F. Grease a 2-quart baking dish with butter and set it aside.
- Place the peach slices in the bottom of the prepared dish, then sprinkle them with 2 tablespoons of sugar. If your peaches are particularly soft and juicy, you can mix them with a tablespoon of cornstarch to thicken the filling.
- In a separate bowl, whisk together the flour, 3/4 cup of sugar, baking powder, cinnamon, nutmeg, and salt.
- After melting the butter, whisk in the vanilla extract. Pour this butter mixture into the flour mixture and stir until well combined and the batter is moist, similar to cookie dough.
- Using your hands, crumble the batter evenly over the peaches in the baking dish.
- Bake for 25 to 30 minutes until the top is golden brown and the filling is bubbling.
- Take the dish out of the oven and allow it to cool at room temperature for about 15 minutes.
- Serve the dessert warm, accompanied by a scoop of ice cream.
