Ingredients
- 1 cup all-purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 1 tbsp unsweetened cocoa powder
- 1 egg, beaten
- 3/4 cup buttermilk
- 2 tbsp butter, melted
- 4 tsp red food coloring
Cream Cheese Glaze
- 2 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 ½ tbsp milk, may need a few drops more
- 1/2 tsp vanilla extract
- powdered sugar, garnish
Instructions
Pancakes
- In a big bowl, mix together flour, baking powder, salt, sugar, and cocoa powder.
- Add egg, buttermilk, butter, vanilla extract, and red food coloring.
- I used to add the red food coloring last, but now I find it easier to add it before stirring everything.
- Gently stir until combined; it’s okay if there are still a few lumps.
- Let the batter sit for 10-15 minutes while you prepare the glaze.
Glaze
- In a medium-sized bowl, combine all the cream cheese glaze ingredients until smooth. Set it aside.
- Heat a griddle and grease it with butter.
- Once it’s hot, pour ¼ cup of batter per pancake onto the griddle.
- Flip the pancakes when you see the first few bubbles breaking on the surface.
- When the other side feels soft and pillowy, the pancake is done!
- Stack the pancakes on a plate.
Assemble
- Place one pancake on a plate and spread a layer of cream cheese glaze on top.
- Repeat with another pancake.
- Stack the third pancake and sprinkle powdered sugar on it.
- Pipe on some more cream cheese glaze.
- Serve and enjoy!
Notes
- Don’t mix the batter too much; it’s okay if it’s a bit lumpy.
- No need for syrup with this recipe; the cream cheese glaze is plenty.
- Don’t skip the cream cheese glaze—it’s the best part. Without it, the pancakes taste like plain buttermilk with a hint of chocolate.
- Get creative with the food coloring; try different colors for fun pancakes.
