Salmon with Creamy Garlic Dijon Recipe

Ingredients
4 (6 – 7 oz) skinless salmon fillets
3 tsp of olive oil
Salt and freshly ground black pepper
3 garlic cloves, minced (1 Tbsp)
1/2 tsp of cornstarch
1/2 cup of heavy cream
1 1/2 Tbsp of dijon mustard or you can add a little more to taste
1/2 tsp of honey
1/2 cup of low-sodium chicken broth
1 Tbsp of minced fresh dill
Instructions
– Heat a large, medium-high-heat non-stick skillet (or use two skillets if you used large 7 – 8 oz fillets as I did so they are not overcrowded).
– Add 1 1/2 tsp of olive oil to each skillet and dab the dried salmon on both sides with paper towels and season with salt and pepper on both sides.
– Place the salmon in a saucepan (top of salmon turned down). And let sear on the bottom until golden brown, approximately 5 minutes, then flip and continue to cook until desired, approximately 3 minutes longer.
– Meanwhile, whisk together 1 tbsp of cream with cornstarch in a liquid measuring cup, and then mix in enough cream to measure 1/2 cup. A whisk of Dijon mustard and honey, of course.
– Remove the salmon from the saucepan and transfer to a plate, leave the oil in one saucepan and cover the salmon with foil.
– Add the garlic to the skillet with the oil over medium heat and sauté for around 30 seconds until just golden brown, then pour in the chicken broth.
– Bring to a simmer, then reduce the heat to medium-low and then simmer for approximately 2/3, about 4 minutes, until reduced.
– Once again, whisk the cream mixture and then pour it into the skillet.
– Cook and stir, bring to a simmer, and then leave to simmer gently for around 40 seconds while stirring.
– Stir the dill from the heat and return the salmon fillets to the pan, then spoon the sauce over the salmon.
– Serve warm.
