Ingredients
- 1 (15.25-ounce) box of white cake mix, plus any additional ingredients listed on the box
- 1 (3-ounce) box of strawberry Jello (or lime, raspberry or cherry)
- 1 cup boiling water
- 1 cup cold water
- 1 (8-ounce) tub of whipped topping or 2 cups of whipped cream
Instructions
- Prepare the cake according to the instructions on the box and bake it in a 9-x-13-inch baking dish. Let it cool for about 15 minutes.
- Poke the cake with a fork at intervals of ½–1 inch.
- Follow the directions on the package to make the Jell-O, using hot and cold water.
- Gradually spoon the Jell-O liquid over the cake until it is all absorbed.
- Chill the cake in the refrigerator for about 3–4 hours. Top it with whipped topping just before serving.
Notes:
- Storage: Due to the Jell-O, this poke cake must be kept chilled. Cover the cake tightly and store it in the refrigerator for 2–3 days.
- Cupcake Version: Instead of making a 9-x-13-inch cake, follow the directions on the cake mix box to make cupcakes. Once the cupcakes have cooled, poke them with a fork or skewer, drizzle Jell-O into the holes, and chill as directed above before adding whipped topping.
