Ingredients

  • 1 cup butter, melted, slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs
  • 1 tbsp pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder or Dutch-processed
  • 1 tsp espresso powder, optional
  • 1 tsp kosher salt
  • 1 ¼ cups chopped chocolate, divided

Instructions

  1. Preheat the Oven: Set your oven to 350°F. Grease a 9×13-inch baking pan using nonstick cooking spray. Line it with parchment paper, leaving some overhang on the sides, and spray the parchment paper again. This makes it easy to lift the brownies out of the pan later. Set the pan aside.
  2. Mix Wet Ingredients: In a big mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until the sugar dissolves. Add the eggs and vanilla extract, whisking until smooth and combined.
  3. Sift in the flour and cocoa into the bowl with the wet ingredients. Add the salt and espresso powder, if using. Stir until just combined, being careful not to overmix.
  4. Fold in 1 cup of chopped chocolate until it’s evenly distributed throughout the batter. Spread the batter evenly into the prepared pan. Sprinkle the remaining ¼ cup of chopped chocolate over the brownies.
  5. Bake the brownies for about 25-30 minutes on the middle rack in the oven, until they’re just set to touch. Avoid overbaking them; they’ll continue to set up as they cool.
  6. Remove the pan from the oven and let the brownies cool before cutting them into squares. If desired, sprinkle them with a little flaky sea salt for extra flavor.
