Ingredients

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 large egg

Instructions

  • Set your ingredients out on the counter so everything is ready for you. Warm the oven to 350°F and let it heat while you start the dough.
  • In a bowl, mix the peanut butter, sugar, and egg with an electric mixer until the texture turns smooth and silky. It should come together easily.
  • Roll the dough into small balls about an inch wide and place them on an ungreased baking sheet, leaving space between each one so they can bake properly.
  • Take a fork and gently press the tops twice, one time in each direction, to give them the classic criss cross pattern or any pattern you like.
  • Bake them until the edges feel firm, usually around ten minutes. Let them rest on the baking sheet for a moment, then move them to a wire rack so they can cool completely. Enjoy them once they are set.

Notes

  • Using crunchy peanut butter gives the cookies a lovely texture and a bit of bite. If your dough feels dry, add a teaspoon or two of warm water, or a touch more peanut butter, just until it holds together nicely.
  • For a little sparkle, sprinkle each cookie with coarse sugar before baking. It gives a sweet, glistening finish that makes them look as good as they taste.
