1cuppeanut butter

Instructions
Set your ingredients out on the counter so everything is ready for you. Warm the oven to 350°F and let it heat while you start the dough.
In a bowl, mix the peanut butter, sugar, and egg with an electric mixer until the texture turns smooth and silky. It should come together easily.
Roll the dough into small balls about an inch wide and place them on an ungreased baking sheet, leaving space between each one so they can bake properly.
Take a fork and gently press the tops twice, one time in each direction, to give them the classic criss cross pattern or any pattern you like.
Bake them until the edges feel firm, usually around ten minutes. Let them rest on the baking sheet for a moment, then move them to a wire rack so they can cool completely. Enjoy them once they are set.
Notes
Using crunchy peanut butter gives the cookies a lovely texture and a bit of bite. If your dough feels dry, add a teaspoon or two of warm water, or a touch more peanut butter, just until it holds together nicely.
