47 oz salmon fillets, skin-on or skinless
2tablespoonlight brown sugar
2tablespoondijon mustard
1teaspoonlemon zest
1teaspoonminced garlic
1 1/2teaspoonchopped fresh parsleyoptional
Salt and freshly ground black pepper
Instructions
Preheat your oven to 400°F. Line a 13 x 9-inch or 18 x 13-inch baking sheet with aluminum foil and coat the foil with non-stick cooking spray.
Arrange the salmon pieces on the baking sheet, leaving space between each fillet. Season the tops with salt and pepper.
In a small bowl, whisk together the brown sugar, mustard, lemon zest, and garlic until well combined.
Spoon and spread the brown sugar mustard mixture evenly over the salmon, ensuring each fillet is coated.
Bake in the preheated oven for 15 minutes, or until the salmon is cooked through. The exact time will depend on the thickness of the fillets and your preferred doneness.
For a medium finish, an internal temperature of 125–135°F is ideal.
If desired, garnish with fresh parsley for a pop of color before serving.
