Ingredients

Buffalo Chicken Meatballs

  • 2 eggs
  • 1 lb ground chicken
  • 1 large celery stalk and finely diced
  • 1 clove garlic minced
  • 2/3 cup bread crumbs
  • 1/3 cup green onion diced
  • half of the creamy wing sauce
  • generous sprinkle of sea salt

Dressing

  • blue cheese dressing for serving
  • ranch dressing for serving

Creamy Wing Sauce

  • 2 Tbalespoon butter
  • 1/3 cup Frank's hot sauce or you prefer buffalo wing sauce
  • 1/3 cup crumbled blue cheese

Instructions

Buffalo Chicken Meatballs

  • In a large bowl, combine the ground chicken, eggs, and half of the prepared creamy wing sauce. Mix until well combined.
  • Add the chopped green onion, minced garlic, celery, and breadcrumbs to the mixture. Stir everything together until fully incorporated.
  • Using a cookie scoop, form meatballs and place them on a parchment-lined baking sheet.
  • Bake in a preheated oven at 425°F for 15-20 minutes, or until the internal temperature reaches 165°F.
  • Once the meatballs are cooked, toss them in the remaining creamy wing sauce and transfer them to your serving dish.
  • For extra flavor, sprinkle additional green onions and crumbled blue cheese on top of the meatballs, if desired.
  • Serve with blue cheese or ranch dressing on the side for dipping. Enjoy!

Creamy Wing Sauce

  • In a small saucepan, combine butter, wing sauce, and blue cheese crumbles.
  • Heat over medium-high, stirring continuously until the butter and blue cheese are fully melted and the sauce is smooth.
