Ingredients

  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 2 large egg yolks
  • 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups apricot jam

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and spray an 8x10 baking dish with baking spray.
  • In your stand mixer, combine the butter and sugar, mixing on medium speed until fluffy, about 2-3 minutes.
  • Add the egg yolks and vanilla extract, mixing until creamy.
  • Gradually add the flour, baking powder, and salt, mixing until just combined.
  • Spread about half of the mixture into the prepared baking dish and press gently to form an even layer.
  • Spread the apricot jam over the shortbread layer.
  • Sprinkle the remaining shortbread mixture over the apricot jam.
  • Bake for about 35-40 minutes or until golden brown.
  • Allow the bars to cool completely before slicing.
