- 1 cup unsalted butter softened
- 1 cup sugar
- 2 large egg yolks
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups apricot jam
Preheat your oven to 350 degrees Fahrenheit and spray an 8x10 baking dish with baking spray.
In your stand mixer, combine the butter and sugar, mixing on medium speed until fluffy, about 2-3 minutes.
Add the egg yolks and vanilla extract, mixing until creamy.
Gradually add the flour, baking powder, and salt, mixing until just combined.
Spread about half of the mixture into the prepared baking dish and press gently to form an even layer.
Spread the apricot jam over the shortbread layer.
Sprinkle the remaining shortbread mixture over the apricot jam.
Bake for about 35-40 minutes or until golden brown.
Allow the bars to cool completely before slicing.
