1Tbspsalted butter
1Tbspolive oil
2poundschicken breastcut into 1-inch pieces
2tspminced garlic
¾cupchicken stock
¼cuplow sodium soy sauce
3Tbsphoisin sauce
1 ½Tbsprice vinegar
2Tbspcorn starch
¾cupunsalted cashews
salt and pepperto taste

Instructions
Heat 1 tablespoon of butter and 1 tablespoon of oil in a large skillet over medium heat.
Add 2 pounds of diced chicken in a single layer. Season with salt and pepper. Cook for about 3 minutes, or until browned, then flip the chicken and cook for another 3 minutes until golden brown. Reduce the heat to low, stir in 2 teaspoons of garlic, and cook for one more minute.
Make the sauce:
While the chicken cooks, whisk together ¾ cup chicken stock, ¼ cup soy sauce, 3 tablespoons hoisin sauce, 1 ½ tablespoons vinegar, and 2 tablespoons cornstarch in a small bowl.
Simmer:
Pour the sauce over the chicken and simmer on low heat until the sauce thickens. Stir in ¾ cup cashews.
Serve:
Serve the chicken and sauce over rice. Garnish with chopped green onions and sesame seeds, if desire
