For the sour cream sauce

Instructions
Place the grated zucchini in a colander set over the sink.
Sprinkle with 1 teaspoon of salt and toss gently to combine. Let the zucchini rest for 10 minutes. Then, using a clean dish towel or cheesecloth, squeeze out any excess moisture.
In a large bowl, mix together the zucchini, chicken, mozzarella, corn, Parmesan, flour, egg, chives, lemon zest, and garlic. Season with salt and pepper to taste.
Heat vegetable oil in a large cast iron skillet over medium-high heat. In batches, drop 3-4 tablespoons of batter for each fritter and flatten it with a spatula.
Cook until the bottom is golden brown, about 2-3 minutes. Flip the fritter and cook for another 2 minutes, or until the other side is golden.
Serve right away with a side of sour cream sauce.
For the sour cream sauce
In a medium bowl, mix together sour cream, chives, lemon juice, and garlic. Season with salt and pepper to taste. Refrigerate until ready to serve.
