Ingredients

  • 2 ⅔ cups 320 gr all-purpose flour, (stir, spoon & level)
  • 1 cup 226 gr unsalted butter, (2 sticks) softened
  • 2 cups 400 gr light brown sugar, gently packed
  • 2 large eggs room temperature
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract

Cinnamon-Sugar

  • 2 tablespoon granulated sugar
  • 2 teaspoon ground cinnamon

Instructions

  • Set your oven to 350°F so it can warm up while you prep. Grab a 13×9-inch pan, and either give it a light spritz of cooking spray or line it with parchment paper. If you’re using parchment, let the edges hang over a bit—it’ll make lifting your dessert out later a total breeze!
  • Beat the butter and brown sugar together with an electric mixer until they’re nice and creamy. Toss in the eggs and vanilla, then mix again until the mixture turns light and fluffy—don’t rush, make sure it’s all blended beautifully. Don’t forget to pause and scrape down the bowl to get every last bit in the mix!
  • In a large bowl, whisk together the flour, baking powder, salt, and cinnamon—this is where all the cozy flavors come together. Slowly add this dry mix to the buttery goodness, mixing just until everything is combined. Be gentle; no need to overmix!
  • Spread the cookie dough evenly into your prepared pan, pressing it down nice and smooth. A little tip? A mini rolling pin lightly dusted with flour works wonders to keep the dough from sticking!
  • Mix the sugar and cinnamon together, then sprinkle it evenly over the top of the dough. For a flawless finish, you can gently spread it with your hands or use a pastry brush to make sure every inch is coated with that sweet cinnamon goodness!
  • Pop the pan into the oven and bake at 350°F for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. (Heads up: the edges might puff up more than the center, but no worries! While the dessert is still warm, you can gently press the edges down with a spatula to even things out.) Let it cool completely before slicing into bars and serving.

Notes

  • To Serve: Slice the bar into 15 pieces by cutting 3 rows across and 5 rows down. If you lined the pan with parchment paper, simply lift the entire dessert out using the overhang, place it on a cutting board, and slice it there—it’s super easy!
  • Storage: Cover any leftovers tightly in the pan with plastic wrap or foil, or transfer them to an airtight container. They’ll stay fresh at room temperature for 3–4 days.
  • Tip: The edges tend to crisp up quite a bit. If that’s not your vibe, you can trim them off before serving!
