Ingredients

  • 8 thick slices of slightly stale white bread – ~1 inch thick each ~240 g total
  • 4 large eggs – ~200 g with shell
  • ½ cup milk – 120 ml ~120 g
  • Pinch of salt – ~1 g
  • ½ cup white sugar – 100 g
  • 1 tsp cinnamon powder – ~2.6 g
  • 6 tbsp butter separated – 85 g (1 tbsp ≈ 14 g)
  • Maple syrup to serve – as desired ~20–30 g per serving

Instructions

  • Start by cutting the crust off your bread, then cut each slice into 9 even little cubes.
  • In a medium bowl, whisk together the eggs, milk, and a pinch of salt until smooth. In a separate shallow bowl, mix the sugar and cinnamon together.
  • Melt 1½ tablespoons of butter in a frying pan over medium-high heat — just don’t let it brown!
  • Quickly toss half of the bread cubes in the egg mixture, then gently shake off any extra egg.
  • Place the cubes in the pan and use a wooden spoon to sauté them until they’re golden brown on all sides, about 2–3 minutes.
  • Once browned, immediately toss the cubes in the cinnamon sugar mixture, then transfer them to a plate.
  • Repeat the process with the remaining bread cubes.
  • Serve these little bites straight away with some maple syrup for dipping — they’re best warm and gooey!

Notes

  1. I recommend using slightly stale bread — it soaks up just the right amount of egg and keeps the cubes from falling apart when you sauté them. A block loaf works best, cut into slices about 1″ (2.5 cm) thick.
  2. You can use pre-sliced bread or any leftover bread, but the cubes might be smaller or a bit misshapen. I’ve even tried sourdough, baguettes, or a mix of leftover bread — all tasty!
  3. This recipe makes enough for 3 people, or 2 if you’re really hungry.
