Ingredients

  • 6 cups peeled and diced Russet potatoes approx 5 medium potatoes and dice into small cubes about 3/4-inch
  • 1 1/2 cups chopped yellow onion - 1 medium
  • 1 1/4 cups peeled and diced carrots - 3 medium
  • 1 cup diced celery - 2 stalks
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/2 cup sour cream
  • 2 14.5 oz each cans low-sodium chicken broth
  • Salt and freshly ground black pepper

Instructions

  • Place the diced potatoes, carrots, celery, and onions in a large pot, then pour in the chicken broth. Season with salt and pepper to your liking.
  • Cover the pot and bring the mixture to a boil over medium-high heat, which should take around 10 minutes.
  • After reaching a boil, lower the heat to medium and simmer for another 15 to 20 minutes, until the potatoes become tender and can be easily pierced with a fork.
  • In the meantime, melt butter in a medium saucepan over medium heat. Add the flour and whisk continuously for 1 minute. Gradually pour in the milk while whisking, and cook, stirring constantly, until the mixture starts to thicken.
  • Once the potatoes are tender, stir the thickened milk mixture into the potato soup. The potatoes should begin to break down, blending into the soup.
  • Mix in the sour cream until well combined.
  • Ladle the soup into bowls and garnish each serving with your fav toppings

  • For a tasty variation, try swapping the sour cream with heavy cream or half-and-half. This alternative adds a rich, creamy texture that's equally delicious.
