Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 cups peaches chopped

Instructions

  • Preheat the oven to 350°F and line a muffin tin with liners.
  • In a stand mixer or large bowl with a hand mixer, combine sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth (about 30 seconds on low speed).
  • Sift together flour, baking soda, salt, and cinnamon, then add to the wet ingredients, mixing until just combined on low speed.
  • Gently fold in the peaches, then scoop the batter into the muffin liners.
  • Bake for 20-22 minutes until golden brown.
