Ingredients

Brownie Layer

  • 113 g unsalted butter melted (½ cup)
  • 150 g granulated sugar ¾ cup
  • 100 g brown sugar ½ cup
  • 2 large eggs
  • 5 ml vanilla extract 1 tsp
  • 94 g all-purpose flour ¾ cup
  • 43 g cacao powder ½ cup
  • 2.5 g salt ½ tsp
  • 85 g chopped chocolate ½ cup

Cookie Layer

  • 113 g unsalted butter browned and cooled (½ cup)
  • 110 g brown sugar ½ cup
  • 50 g granulated sugar ¼ cup
  • 1 large egg
  • 5 ml vanilla bean paste 1 tsp
  • 156 g all-purpose flour 1¼ cups
  • 2.5 g baking soda ½ tsp
  • 1.25 g salt ¼ tsp
  • 85 g chocolate chips ½ cup
  • 85 g chopped chocolate ½ cup

Instructions

  • Prepare the Pan: Line a 9 x 5-inch loaf pan with parchment paper, making sure the paper covers the base and sides for easy removal.
  • Make the Two Batters: For the brownie layer, whisk the melted butter with both sugars until combined. Add the eggs and vanilla, then mix in the flour and cacao powder until the batter comes together. For the cookie layer, cream the cooled browned butter with the sugars. Beat in the egg and vanilla, then gently fold in the dry ingredients and chocolate chips.
  • Layer the Loaf: Spread the brownie batter evenly across the bottom of the prepared pan. Spoon the cookie dough over the brownie layer, gently pressing and spreading it into place. Finish with a scattering of extra chopped chocolate.
  • Bake: Place the loaf in a preheated 175°C (350°F) oven and bake for 40 to 50 minutes. The edges should feel set while the center remains slightly soft and fudgy.
  • Cool Before Slicing: Allow the loaf to cool completely in the pan. This gives the layers time to set properly and helps the loaf hold its shape when sliced.
