In a small bowl, mix olive oil, hot sauce, paprika, garlic powder, and salt. Add chicken and let it sit for at least 10 minutes (or up to 24 hours) to soak up the flavors.
Heat a large non-stick skillet over medium-high heat. Add the chicken strips and cook for about 4-5 minutes until they're no longer pink.
While the chicken cooks, lay out tortillas on a plate. Spread a thin layer of bleu cheese or ranch dressing on each tortilla.
Layer lettuce, carrots, avocado, and cheese on top of the dressing.
Place a few cooked chicken strips in the center of each tortilla.
Roll the tortillas tightly, similar to making a burrito.
