Ingredients
1/2cup1 stick unsalted butter, softened
15ouncebox German chocolate cake mix
1/2cupsweetened flaked coconutdivided
1/2cupbutterscotch chips
1/2cupsweetened condensed milk
1large egg
Instructions
Preheat the oven to 350°F and line a 9x9 inch baking pan with parchment paper.
Beat the butter until soft and fluffy. Add the cake mix, egg, and 1/4 cup of the coconut, then mix until a thick dough forms.
Press about two thirds of the dough evenly into the bottom of the pan. Sprinkle the remaining coconut and the butterscotch chips over the dough.
Drizzle the sweetened condensed milk on top, leaving a small border around the edges.
Crumble the remaining dough over the top and press lightly.
Bake for 30 minutes, until lightly golden. Let cool completely, then refrigerate for a few hours before cutting into bars.
Notes
These bars must chill before slicing or the filling will be too soft.
Chopped toasted pecans can be mixed into the dough or sprinkled on top.
For a 9x13 inch pan, use a full can of sweetened condensed milk and 1 cup of butterscotch chips. The bars will be thinner and need a slightly shorter baking time.
