Ingredients

For the Chicken Meatballs:

  • 1 lb. ground chicken or turkey
  • 3/4 cups panko breadcrumbs
  • 1 large egg
  • 2 tsp minced garlic
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika

For the Firecracker Sauce:

  • 1/2 cup hot sauce Franks Red Hot
  • 1 cup light brown sugar
  • 2 tbsps apple cider vinegar
  • 1/4 tsp kosher salt
  • 1/4 tsp crushed red pepper flakes or to taste

Instructions

  • Set your oven to 450°F and prepare a large baking sheet by lining it with parchment paper. Set it aside.

For the Chicken Meatballs:

  • In a large bowl, mix all the meatball ingredients thoroughly with your hands until everything is well incorporated.
  • Form the mixture into 2-tablespoon-sized balls using your hands and arrange them on the prepared baking sheet. Bake for 10 minutes, or until the meatballs are fully cooked.

For the Firecracker Sauce:

  • In a small saucepan, combine all the sauce ingredients and whisk until smooth. Heat over medium-high until it comes to a boil. Lower the heat and simmer for 8-10 minutes, stirring often. Remove from heat and allow the sauce to cool slightly; it will thicken as it cools.
  • Coat each meatball in the sauce by dipping them individually, then place them on a baking sheet or wire rack. Alternatively, brush the sauce over the meatballs. Serve warm on their own or as part of lettuce wraps. Enjoy!
