2tablespoonall-purpose flour
1 1/2teaspoonItalian seasoning
Salt and freshly ground black pepper
1tablespoonolive oil
3tablespoonunsalted butterdivided
1 1/2tablespoonminced fresh garlic4 cloves
2tablespoonfinely chopped fresh parsley
Instructions
Heat a 12-inch non-stick skillet over medium-high heat.
Pat the chicken dry on all sides with paper towels.
Sprinkle flour, Italian seasoning, and a pinch of salt and pepper over the chicken. Toss the chicken well to ensure it's fully coated—if any flour remains on the cutting board, keep tossing.
Add 1 tablespoon of olive oil and 1 tablespoon of butter to the hot skillet, swirling the pan to spread the melted butter evenly.
Arrange the chicken pieces in a single layer, making sure there’s some space between them to allow browning instead of steaming.
Cook the chicken for about 3 minutes until the bottom is golden brown, then flip and cook the other side for an additional 2 minutes, or until the chicken is nearly cooked through.
Add the remaining 2 tablespoons of butter in small pieces, along with garlic and parsley. Let the chicken cook for another minute, ensuring the internal temperature reaches 165°F, and the chicken is no longer pink.
