Ingredients

  • 1.5 lbs chicken breasts boneless skinless
  • 3/4 cup chicken broth cut into 1.5 inch cubes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp parsley chopped
  • lemon juice

Marinade

  • 1/2 cup olive oil
  • 5 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 tsp sugar
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper

Instructions

  • In a large bowl, mix all the marinade ingredients except the olive oil. While whisking, slowly drizzle in the olive oil until everything is well blended and smooth.
  • Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for at least 20 minutes or up to 2 hours. When ready, remove the chicken from the marinade, pat it dry, and season with salt and pepper.
  • Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer—work in batches if needed to avoid overcrowding. Let it cook undisturbed for about 2 minutes until beautifully seared, then flip and cook for another minute. Transfer the chicken to a plate (it won’t be fully cooked yet—that’s okay!).
  • In the same pan, add the garlic and sauté for about 20 seconds until fragrant. Pour in the chicken broth and use a wooden spoon or silicone spatula to scrape up any flavorful bits from the bottom. Let the broth simmer until it reduces by half.
  • Return the chicken to the pan and stir occasionally until the liquid has evaporated and the chicken is cooked through. Finish with fresh parsley and a squeeze of lemon juice for brightness. Give everything a quick toss, then serve and enjoy!
