3/4cupchicken broth cut into 1.5 inch cubes

Marinade
1/2cupolive oil
5tbsplemon juice
1tspdijon mustard
1tspsugar
2tspdried oregano
1/2tspsalt
1/4tspfreshly ground pepper
Instructions
In a large bowl, mix all the marinade ingredients except the olive oil. While whisking, slowly drizzle in the olive oil until everything is well blended and smooth.
Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for at least 20 minutes or up to 2 hours. When ready, remove the chicken from the marinade, pat it dry, and season with salt and pepper.
Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer—work in batches if needed to avoid overcrowding. Let it cook undisturbed for about 2 minutes until beautifully seared, then flip and cook for another minute. Transfer the chicken to a plate (it won’t be fully cooked yet—that’s okay!).
In the same pan, add the garlic and sauté for about 20 seconds until fragrant. Pour in the chicken broth and use a wooden spoon or silicone spatula to scrape up any flavorful bits from the bottom. Let the broth simmer until it reduces by half.
Return the chicken to the pan and stir occasionally until the liquid has evaporated and the chicken is cooked through. Finish with fresh parsley and a squeeze of lemon juice for brightness. Give everything a quick toss, then serve and enjoy!
