Ingredients

For the Chicken

  • 2 pounds boneless skinless chicken thighs
  • ½ cup olive oil
  • 6 cloves garlic minced
  • 1 tsp kosher salt
  • 2 tsp freshly ground black pepper
  • 2 tsp ground cumin
  • 2 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp red-pepper flakes
  • 2 lemons juiced

For the Pitas

  • 6 whole pita bread
  • 2 Tbsp Chopped Parsley
  • ½ cup Cherry Tomatoes halved
  • ½ cup Cucumbers cubed
  • 1 recipe Homemade Tzatziki Sauce
  • 1 cup Shredded Romaine lettuce

Instructions

  • In a large zip-top bag, mix together the lemon juice, ½ cup olive oil, garlic, salt, pepper, cumin, paprika, oregano, and red pepper flakes. Place the chicken in the bag, seal it, and shake to coat everything evenly. Refrigerate for at least 1 hour, or up to 12 hours.
  • Heat a cast iron skillet over medium-high heat. Take the chicken out of the marinade and grill each thigh for 4-5 minutes per side until fully cooked. Remove from the skillet and let rest.
  • Cut the chicken into thin strips, slicing against the grain. Return the strips to the skillet and sauté for 2 minutes, or until they're lightly crispy around the edges.
  • Move the chicken to a large bowl and mix it with the parsley, cherry tomatoes, and cucumbers. Place the chicken mixture in the center of a pita, then add your choice of toppings. Fold the pita and wrap it in parchment to keep everything secure.
