For the Chicken
2poundsboneless skinless chicken thighs
½cupolive oil
6clovesgarlic minced
1tspkosher salt
2tspfreshly ground black pepper
2tspground cumin
2tsppaprika
½tspdried oregano
½tspred-pepper flakes
2lemons juiced
For the Pitas
6whole pita bread
2TbspChopped Parsley
½cupCherry Tomatoes halved
½cupCucumbers cubed
1recipe Homemade Tzatziki Sauce
1cupShredded Romaine lettuce
Instructions
In a large zip-top bag, mix together the lemon juice, ½ cup olive oil, garlic, salt, pepper, cumin, paprika, oregano, and red pepper flakes. Place the chicken in the bag, seal it, and shake to coat everything evenly. Refrigerate for at least 1 hour, or up to 12 hours.
Heat a cast iron skillet over medium-high heat. Take the chicken out of the marinade and grill each thigh for 4-5 minutes per side until fully cooked. Remove from the skillet and let rest.
Cut the chicken into thin strips, slicing against the grain. Return the strips to the skillet and sauté for 2 minutes, or until they're lightly crispy around the edges.
Move the chicken to a large bowl and mix it with the parsley, cherry tomatoes, and cucumbers. Place the chicken mixture in the center of a pita, then add your choice of toppings. Fold the pita and wrap it in parchment to keep everything secure.
