Start by cooking your pasta in salted water according to the package directions. While that’s cooking, spray a baking dish with a little oil and set it aside.
Preheat your oven to 375°F.
In a large, heavy skillet, melt the butter over low heat. Whisk in the flour and stir until it forms a smooth paste.
Toss in the chopped onion and cook for another 2 minutes. Slowly pour in the milk and chicken broth, whisking constantly.
Turn the heat up to medium-high and keep whisking until the mixture starts to bubble and turns smooth and thick.
Season with salt and pepper to taste.
Once it’s thick and creamy, remove the pan from the heat. Stir in the cheese, ¼ cup at a time, until it’s all melted and gooey.
Taste and adjust the seasoning if needed. Then add the cooked macaroni and fresh baby spinach—give it all a good mix!
Pour the cheesy pasta into your prepared baking dish. Sprinkle more grated cheese on top, followed by breadcrumbs. Give the top a light spray of oil to help it crisp up.
Bake for 15–20 minutes, then switch on the broiler for a couple of minutes to get that golden, crunchy topping. Serve hot and dig in! 🧀🔥
