Ingredients

  • 185 g raw unsalted peanuts (1½ cups)
  • 96 g natural peanut butter smooth or crunchy (6 tbsp)
  • 15 –45 ml maple syrup or agave syrup 1–3 tbsp
  • 15 g unsweetened cocoa powder 3 tbsp
  • 1 pinch salt

Instructions

  • Begin by adding the peanuts to a food processor.
  • Give them just two or three quick pulses, enough to break them into small, coarse pieces while keeping some of their natural texture.
  • Add the remaining ingredients and process until everything is evenly combined. The mixture should remain slightly textured rather than becoming completely smooth.
  • If it seems too dry or crumbly to hold together, add a small splash of water and process again.
  • Using your hands, portion the mixture and roll it into small, even balls.
  • Arrange them on a plate or tray and place them in the fridge until firm and nicely set.

Notes

  1. If the recipe does not need to be vegan, honey can be used instead. For a naturally sweetened option, substitute 3 to 4 pitted Medjool dates.
  2. Adjust the sweetness according to personal taste. Starting with less sweetener is often worthwhile, as the palate gradually becomes accustomed to enjoying foods with less added sweetness.
