Ingredients

  • 1 32 oz carton low-sodium chicken broth
  • 1/2 cup oil-packed sun-dried tomatoes with herbs and drained and dab excess oil off with paper towels chopped
  • 2 teaspoons Italian seasoning
  • 1 tablespoon minced garlic
  • Salt and freshly ground black pepper
  • 1 lb boneless skinless chicken breasts and cut into 1-inch cubes
  • 12 oz uncooked campanelle pasta
  • 5 oz fresh baby spinach
  • 1 8 oz pkg. light cream cheese, and cut into cubes and softened
  • 1 cup finely shredded parmesan cheese fresh shredded
  • 1/4 cup chopped fresh basil

Instructions

  • In the Instant Pot insert, combine broth, tomatoes, Italian seasoning, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper (adjust seasoning later if needed).
  • Stir in chicken and pasta, making sure to submerge them into the broth.
  • Secure the lid, set the pressure valve to "sealing," and select the "manual" or high-pressure setting for 5 minutes.
  • After the timer beeps, select "cancel" and perform a quick release by carefully turning the valve to the "venting" position, stepping back as steam releases.
  • Once the steam stops, open the lid and immediately stir the noodles to separate. Add spinach, light cream cheese, and Parmesan, stirring well.
  • Allow it to rest for 5-10 minutes to thicken (it may seem like soup initially, but it thickens as it rests).
  • Just before serving, toss in basil. Serve warm and optionally garnish with diced sun-dried tomatoes.
