Ingredients

  • 1 1/4 lbs. boneless skinless chicken breasts cut into 1 1/4-inch pieces
  • 2 tablespoon all-purpose flour
  • 1 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 tablespoon unsalted butter divided
  • 1 1/2 tablespoon minced fresh garlic 4 cloves
  • 2 tablespoon finely chopped fresh parsley

Instructions

  • Heat a 12-inch non-stick skillet over medium-high heat.
  • Pat the chicken dry on all sides with paper towels.
  • Sprinkle flour, Italian seasoning, and a pinch of salt and pepper over the chicken. Toss the chicken well to ensure it's fully coated—if any flour remains on the cutting board, keep tossing.
  • Add 1 tablespoon of olive oil and 1 tablespoon of butter to the hot skillet, swirling the pan to spread the melted butter evenly.
  • Arrange the chicken pieces in a single layer, making sure there’s some space between them to allow browning instead of steaming.
  • Cook the chicken for about 3 minutes until the bottom is golden brown, then flip and cook the other side for an additional 2 minutes, or until the chicken is nearly cooked through.
  • Add the remaining 2 tablespoons of butter in small pieces, along with garlic and parsley. Let the chicken cook for another minute, ensuring the internal temperature reaches 165°F, and the chicken is no longer pink.
  • Serve immediately while hot.
