Ingredients
1cupraw cashews
1cupsoft pitted Medjool dates10 large dates
½cupfine shredded unsweetened coconut
½cupfine shredded unsweetened coconutfor rolling
Zest from 1 lime
2tbspfresh lime juice
Instructions
Add all ingredients except for the extra shredded coconut to your food processor and pulse until the mixture is well combined and sticky.
Roll the mixture into 14 balls.
If desired, roll each ball in shredded coconut, then place them in an airtight container. Store in the fridge for up to 1 week or freeze for up to 3 months.
Notes
If your dates aren't already soft, soak the pitted dates in 1 cup of very warm water for 5-10 minutes. This will help them soften, making them perfect for blending in your food processor. While the dates are soaking, prepare and measure out your remaining ingredients.
