Ingredients

  • 1 cup raw cashews
  • 1 cup soft pitted Medjool dates 10 large dates
  • ½ cup fine shredded unsweetened coconut
  • ½ cup fine shredded unsweetened coconut for rolling
  • Zest from 1 lime
  • 2 tbsp fresh lime juice

Instructions

  • Add all ingredients except for the extra shredded coconut to your food processor and pulse until the mixture is well combined and sticky.
  • Roll the mixture into 14 balls.
  • If desired, roll each ball in shredded coconut, then place them in an airtight container. Store in the fridge for up to 1 week or freeze for up to 3 months.

Notes

  • If your dates aren't already soft, soak the pitted dates in 1 cup of very warm water for 5-10 minutes. This will help them soften, making them perfect for blending in your food processor. While the dates are soaking, prepare and measure out your remaining ingredients.
