In a mixing bowl, combine the flour, Italian seasoning, pepper, salt, garlic powder, and sugar. Coat the chicken evenly by pressing the mixture onto both sides.
In a 12-inch non-stick skillet, melt 1 tablespoon of butter along with the olive oil over medium-high heat. Swirl the pan to distribute the butter-oil blend evenly, then add the chicken.
Allow the chicken to cook for about 5 minutes, or until the bottom turns golden brown.
