Ingredients

  • 1 cup flour
  • 1 cup oatmeal
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1-1/2 cups milk
  • 2 teaspoons vanilla

Instructions

  • Add flour, oatmeal, sugar, baking powder, cinnamon, and salt to a food processor. Pulse for about 15 seconds until the oatmeal is broken down and the ingredients are well combined.
  • Next, add the eggs, milk, and vanilla extract. Process for an additional 20 seconds or until the batter is smooth and well-mixed.
  • Preheat your griddle or frying pan over medium heat until hot. Lightly coat with nonstick cooking spray to prevent sticking.
  • Pour 1/4 cup of batter onto the hot surface and cook the pancakes for 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 2 minutes on the other side.
  • Keep a close watch on your pancakes as they can brown quickly if left unattended. When you see the batter bubbling, that’s your signal to flip!
