Ingredients

  • 2 teaspoon olive oil
  • 4 6 oz skinless salmon fillets (1-inch thick),
  • 2 cloves garlic minced
  • 2 1/2 teaspoon minced fresh rosemary
  • 2 1/2 teaspoon cornstarch
  • 1 1/2 teaspoon orange zest
  • 2/3 cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 5 tablespoon chicken broth divided
  • 1 1/2 tablespoon honey
  • Salt and freshly ground black pepper

Instructions

  • In a large non-stick sauté pan or skillet, heat olive oil over medium-high heat.
  • Season both sides of the salmon with salt and pepper.
  • Place the salmon in the pan and cook until browned on both sides and cooked through, about 3-4 minutes per side. Transfer the salmon to a plate, keeping the oil in the pan.
  • Add garlic and rosemary to the pan and sauté for 20 seconds. Pour in 1/4 cup of chicken broth and let it simmer until mostly reduced.
  • Add orange zest, orange juice, lemon juice, and honey to the pan, stirring to combine. In a small bowl, whisk together the remaining 1 tablespoon of chicken broth with cornstarch until smooth.
  • Pour the cornstarch mixture into the pan, season the sauce with salt and pepper to taste, and bring it to a boil. Let it boil for 1 minute, stirring constantly.
  • Return the salmon to the pan, and spoon the sauce over the top.
