Instructions
Lay the chicken breasts on a cutting board and season generously with salt and pepper on both sides. Set aside.
Prepare a breading station with three bowls. In the first bowl, add zested Parmesan cheese. In the second bowl, whisk together the eggs and finely minced fresh rosemary leaves. In the third bowl, place the panko bread crumbs.
Heat a large skillet over medium heat while you bread the chicken.
Dip each chicken cutlet into the Parmesan cheese, shaking off the excess. Then dip it into the egg mixture, letting the excess drip off, and finally into the panko bread crumbs. Shaking off excess during each step helps prevent the breading from falling off while cooking.
Once the skillet is hot, add 2-3 tablespoons of olive oil, ensuring the bottom of the pan is well coated. Add 2-3 chicken cutlets to the hot oil in a single layer, avoiding crowding. Cook for 4-5 minutes on each side, until golden and crispy. If the bread crumbs brown too quickly, lower the heat.
