Start by positioning a rack in the center of your oven and preheating it to 300°F. Line a baking sheet with parchment paper or a silicone mat and set it aside.
In a medium bowl, mix together the granulated sugar, light brown sugar, ground cinnamon, salt, and a little ground nutmeg. Give it a good stir and set the bowl aside , this will be your sweet, spiced coating.
In a small bowl, whisk together the vanilla extract and egg white until it’s foamy and well combined. This helps the sugar mixture cling to the pecans perfectly.
Place the pecans in a large mixing bowl and pour the egg white mixture over them. Toss gently until every pecan is lightly coated. Then add the cinnamon-sugar mixture and toss again until the nuts are completely covered in that lovely spiced sugar.
Spread the pecans out in a single layer on your prepared baking sheet. Bake for 20 minutes, then remove from the oven and give them a good stir so they bake evenly. Return the pan to the oven and bake for another 20 minutes.
You’ll know they’re ready when your kitchen smells like warm cinnamon and the coating starts turning a pale, sugary white. Let the pecans cool completely on the pan , the coating will harden as they reach room temperature.
Once cool, store them in an airtight container. They’ll stay crisp and fragrant for days, though they rarely last that long once everyone gets a taste.
