Ingredients

  • 1 1/2 cups old fashioned rolled oats
  • 1 cup natural smooth peanut butter or any nut butter
  • 2 scoops protein powder
  • 2 Tbsp flax + chia seed blend or chia seeds
  • 1 Tbsp pumpkin pie spice
  • 1/2 cup maple syrup or honey
  • 1/2 cup pure pumpkin
  • 1/2 tsp vanilla extract
  • 1 pinch kosher salt
  • 1/2 cup semi sweet chocolate chips

Instructions

  • In a large mixing bowl, use a rubber spatula, spoon, or your hands to mix everything together until thoroughly combined and the mixture holds together.
  • If the mixture feels too crumbly or dry, stir in a bit more peanut butter or maple syrup. If it’s too wet, add additional rolled oats until the consistency is just right.
  • Use a small cookie scoop or a tablespoon to portion out the mixture, then shape it into balls with your hands.
  • For storage, place the balls in a freezer-safe airtight container or a gallon-sized zip-top bag if making a large batch. If you plan to enjoy them soon, refrigerate for at least 30 minutes to an hour before serving.
  • Store energy bites in the fridge or freezer. If freezing, let them sit at room temperature for a few minutes before enjoying.

Notes

  • If you don’t have pumpkin pie spice on hand, you can make your own blend: Combine 3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 ½ teaspoons ground allspice, and 1 ½ teaspoons ground cloves. Some blends may omit a spice or two, but most include at least a few of these.
  • In a small bowl, whisk together the cinnamon, ginger, nutmeg, allspice, and cloves until well blended. Transfer the mixture to a small jar or container for storage.
