1 1/2cupsold fashioned rolled oats
1cupnatural smooth peanut butter or any nut butter
2scoops protein powder
2Tbspflax + chia seed blend or chia seeds
1Tbsppumpkin pie spice
1/2cupmaple syrup or honey
1/2cuppure pumpkin
1/2tspvanilla extract
1pinchkosher salt
1/2cupsemi sweet chocolate chips
Instructions
In a large mixing bowl, use a rubber spatula, spoon, or your hands to mix everything together until thoroughly combined and the mixture holds together.
If the mixture feels too crumbly or dry, stir in a bit more peanut butter or maple syrup. If it’s too wet, add additional rolled oats until the consistency is just right.
Use a small cookie scoop or a tablespoon to portion out the mixture, then shape it into balls with your hands.
For storage, place the balls in a freezer-safe airtight container or a gallon-sized zip-top bag if making a large batch. If you plan to enjoy them soon, refrigerate for at least 30 minutes to an hour before serving.
Store energy bites in the fridge or freezer. If freezing, let them sit at room temperature for a few minutes before enjoying.
Notes
If you don’t have pumpkin pie spice on hand, you can make your own blend: Combine 3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 ½ teaspoons ground allspice, and 1 ½ teaspoons ground cloves. Some blends may omit a spice or two, but most include at least a few of these.
In a small bowl, whisk together the cinnamon, ginger, nutmeg, allspice, and cloves until well blended. Transfer the mixture to a small jar or container for storage.
