Ingredients

  • 8 oz 2 2/3 cups uncooked rotini pasta
  • 1 lb lean at least 80% ground beef
  • 1/2 cup chopped onion
  • 1 jar 26 oz chunky tomato pasta sauce
  • 1 can 11 oz Southwestern style corn, undrained
  • 1/2 tsp salt
  • 1 cup 4 oz shredded Cheddar cheese
  • 4 medium 1/4 cup green onions, sliced, if desired

Instructions

  • Boil the pasta according to the package instructions, then drain.
  • While the pasta cooks, heat a large nonstick skillet over medium heat and cook the beef and onion, stirring occasionally, until the beef is fully browned, about 8 to 10 minutes.
  • Drain any excess grease. Add the pasta sauce, corn, salt, and drained pasta to the skillet, stirring well.
  • Cook until everything is heated through. Sprinkle cheese on top and let it sit for a couple of minutes until melted.
  • Finish with a sprinkle of green onions and serve.
