Instructions
Take the frozen puff pastry out about 30 minutes before you start assembling the squares. If you're short on time, use the quick-thaw method on the package.
Heat your oven to 350°F (177°C). Unroll the puff pastry and slice it into 9 squares using a pizza cutter or dough cutter—no need for a rolling pin! Place the squares on a parchment-lined baking sheet.
Spoon roughly 1 tablespoon of ricotta cheese onto the center of each square, spreading it into a small, even circle and keeping it 1-2 cm from the edges.
Apply egg wash to the exposed edges of the pastry, making sure to avoid the cheese center.
Top each square with about 1 tablespoon of chocolate chips, then sprinkle sugar over all the squares.
Bake on a parchment-lined sheet at 350°F (177°C) for around 15 minutes, or until the pastry is golden brown and flaky. Enjoy!
