46 oz of skinless salmon fillets
1 1/4teaspoonground coriander
1teaspoonground cumin
1/2teaspoonground paprika
1/2teaspoonground cinnamon
1/2teaspoonground ginger
1/4teaspoonturmeric
1/4teaspoonground nutmeg
1/8teaspooncayenne pepper
1tablespoonolive oil
Salt and freshly ground black pepper
Lemon Yogurt Sauce
1/2cupof fat-free plain Greek yogurt
2Tbspheavy cream or whipping cream
1/4teaspoonlemon zest
2teaspoonfresh lemon juice
1teaspoonminced fresh garlic
1Tablespoonfinely minced fresh cilantroand more for serving
Instructions
Let the salmon sit at room temperature for 10 minutes.
In a mixing bowl, whisk together the coriander, cumin, paprika, cinnamon, ginger, turmeric, nutmeg, and cayenne pepper.
Heat olive oil in a 12-inch non-stick skillet over medium-high heat.
Sprinkle salt and pepper on both sides of the salmon, then rub both sides with the spice mixture.
Place the salmon in the hot skillet and cook for about 4 minutes per side.
Serve the salmon with a lemon yogurt sauce and a sprinkle of fresh cilantro
For the sauce
In a small bowl, mix together the yogurt, cream, lemon zest, lemon juice, garlic, and cilantro. Season lightly with salt and pepper.
While cooking the salmon, let the sauce sit at room temperature (or gently warm it in the microwave if you prefer not to have cold sauce on warm salmon).
