Ingredients

  • 1 ½ pounds boneless skinless chicken thighs
  • 2 Tbsp olive oil
  • 1 Tsp ground coriander
  • 1 Tsp ground turmeric
  • ½ Tsp garlic powder
  • 1 Tsp cumin
  • ½ Tsp oregano
  • ½ Tsp salt
  • ¼ Tsp cayenne Optional
  • Freshly ground black pepper

Instructions

  • Marinate the chicken: In a large bowl, combine the chicken with olive oil, cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt, and pepper.
  • Toss the ingredients together until the chicken is evenly coated.
  • Allow it to marinate for 30 minutes to 1 hour, or up to 24 hours for more intense flavor.
  • Preheat the grill to 400°F.
  • Place the marinated chicken thighs directly on the grill. Grill for 6-9 minutes on each side, or until the chicken is fully cooked and a meat thermometer reads 165°F.
  • Once cooked, transfer the chicken to a plate and cover it with foil to keep warm.
  • After a few minutes, chop the chicken into bite-sized pieces and use it in salads, tacos, bowls, or your favorite dishes.
