Ingredients

Cookies

  • 10 Tbsp 140gr unsalted butter at room temperature
  • ¾ cup 150gr granulated sugar
  • 1 large egg room temperature
  • 2 Tsp almond extract
  • 2 cups 250gr all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Almond Icing

  • ¾ cup 90gr powdered sugar
  • Tbsp milk
  • tsp almond extract
  • ¼ cup sliced almonds for topping

Instructions

  • Preheat your oven to 350°F. In a large mixing bowl, use a mixer on medium speed to cream the softened butter and sugar together until the mixture is light and fluffy, about 1-2 minutes. Add the egg and almond extract, blending well until fully incorporated.
  • Add the flour, baking soda, and salt to the bowl with the wet ingredients, mixing thoroughly until well combined. Be sure to scrape down the sides of the bowl as needed.
  • Scoop 3-4 tablespoons of dough and roll into balls. Place them on a baking sheet, spacing them 2-3 inches apart. Bake for 10-12 minutes, or until the edges are just starting to turn golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • In a small bowl, prepare the icing by mixing powdered sugar, milk, and almond extract until smooth. Spread the icing over the cooled cookies and garnish with a few sliced almonds on top.
