Ingredients

  • 1 lb ground chicken
  • 200 grams rice noodles
  • 1.5 Tbsp red curry paste
  • 3 Tbsp soy sauce
  • 1.5 cups chicken broth
  • 3 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp olive or sesame oil
  • 1 tsp sriracha sauce
  • ½ cup peanut butter
  • 1 tsp garlic minced
  • 1 tsp grated ginger
  • 2 cup coleslaw mix
  • 2 large handfuls of spinach

Instructions

  • Place the rice noodles in a large bowl and pour warm water over them. Let them soak for about 5 minutes, then use a fork to gently separate the noodles. Drain the water.
  • In a separate bowl, whisk together the red curry paste, soy sauce, chicken broth, rice vinegar, sriracha, peanut butter, and honey to create your peanut sauce.
  • Heat oil in a large skillet over medium-high heat. Once the oil is hot, add the ground chicken and cook until it's no longer pink.
  • Stir in the garlic and ginger, cooking for about 1 minute until fragrant. Add the coleslaw mix and cook for about 3 minutes, or until it starts to soften.
  • Add the noodles to the pan with the cooked meat and vegetables. Pour the peanut sauce over the mixture and stir to combine.
  • Toss in the spinach, then cover the pan. Let it simmer for 3-5 minutes, or until the sauce is heated through and the spinach has wilted.
  • Serve the dish topped with chopped peanuts, cilantro, green onions, and a drizzle of chili crunch.
  • If you like, squeeze some fresh lime juice over the top for an extra burst of flavor.
