Preheat your oven to 350°F and pour about 1 cup of sauce into the bottom of a 9 x 12 baking dish—this will keep everything nice and saucy!
Cook the noodles following the package directions, then drain them well.
In a medium bowl, mix together the spinach, ricotta, Parmesan, egg, ½ teaspoon salt, and some black pepper until it’s all nicely combined.
Lay a piece of wax paper on your counter and arrange the lasagna noodles so they don’t stick together. Make sure they’re dry!
Spoon about ⅓ cup of the ricotta mixture evenly over each noodle. Roll them up carefully and place each roll seam-side down in your baking dish.
Pour the rest of the sauce over the noodles, then sprinkle 1 tablespoon of mozzarella cheese on top of each roll.
Cover the dish with foil and bake for 40 minutes, or until the cheese is melted and bubbly.
This recipe makes 9 delicious rolls. When you’re ready to eat, spoon a little extra sauce onto your plate, then top it with a lasagna roll. Yum!
