Ingredients

  • 170 g unsalted butter softened to room temperature (¾ cup)
  • 266 g granulated sugar 1⅓ cups
  • 56 g neutral oil ¼ cup
  • 300 g all-purpose flour 2½ cups
  • 250 g buttermilk room temperature (1 cup)
  • 110 g whole eggs room temperature (2 eggs)
  • 60 g egg whites room temperature (2 egg whites)
  • 19.5 g vanilla extract 1½ tbsp
  • 6 g baking powder 1½ tsp
  • 2 g baking soda ½ tsp
  • 3 g salt ½ tsp

Strawberry Cream Cheese Frosting

  • 114 g unsalted butter softened to room temperature (½ cup)
  • 225 g full-fat brick cream cheese cold (8 oz)
  • 4 g vanilla extract 1 tsp
  • 1.5 g salt ¼ tsp
  • 240 g powdered sugar 2 cups
  • 12 g sliced freeze-dried strawberries measured then crushed (¾ cup before crushing)

Instructions

Vanilla Sheet Cake

  • Start by heating the oven to 350°F or 178°C. Grease a 9x13 inch metal pan and line it with parchment paper so the cake lifts out easily.
  • In a bowl, stir together the flour, baking powder, baking soda, and salt. Set this aside for later.
  • In your mixer bowl, beat the butter and sugar until pale and fluffy, this takes about 3 minutes. Add the oil and mix briefly. Beat in the eggs, egg whites, and vanilla until the mixture looks smooth and well blended.
  • Add half of the dry ingredients and mix gently. Pour in the buttermilk and mix for a few seconds, then finish with the remaining dry ingredients. Stop mixing as soon as everything comes together, this keeps the cake soft.
  • Spread the batter evenly in the pan and bake on the center rack for 28 to 32 minutes. Start checking early. If a toothpick comes out clean, it is ready. Let the cake cool completely before frosting.

Strawberry Cream Cheese Frosting

  • Grind the freeze dried strawberries into a fine powder and set aside.
  • Beat the cream cheese and butter together until smooth and creamy. Add the vanilla and salt, then slowly mix in the powdered sugar until the frosting is smooth. Stir in the strawberry powder and beat until evenly pink and fluffy.
  • Spread the frosting over the cooled cake, slice, and enjoy.
  • Keep the cake in the refrigerator since the frosting contains cream cheese.
