Ingredients
3very ripe bananasabout 300 grams
1/2cup115 grams unsalted butter, melted
1/2cup120 ml buttermilk
2tsp10 ml pure vanilla extract
1cup200 grams brown sugar
1 1/2cups210 grams all-purpose flour
1tspbaking powder
3/4tspbaking soda
1/4tspsalt
1/2cupwalnuts or pecanschopped (optional)
Glaze
1cup120 grams powdered sugar
3tbsp45 ml milk
1tsp5 ml pure vanilla extract
2tbspwalnuts or pecansfinely chopped (optional)
Instructions
Preheat your oven to 350º F (180º C). Grease a bread loaf pan with non-stick baking spray.
In a medium bowl, mash the ripe bananas with a fork until they're smooth.
Stir in the melted butter until it's mixed well with the bananas.
Add the buttermilk, vanilla, and sugar, and mix until everything is well combined.
Add the dry ingredients: flour, baking powder, baking soda, and salt, and mix them in.
If you're using walnuts, add them now and mix until just combined.
Pour the mixture into the prepared bread loaf pan.
Bake for about 1 hour, or until a wooden pick comes out clean when inserted into the bread.
Take it out of the oven and let it cool completely in the pan on a wire rack.
Prepare the glaze:
Mix all the glaze ingredients in a small bowl until smooth.
