The Creamiest Vegan Chocolate Pudding You’ll Ever Make

Ingredients

  • 400 ml 1 can of full fat coconut milk
  • 3 tbsp 20g cacao powder
  • 3 tbsp 40g raw cane sugar
  • 1 tsp vanilla bean paste
  • 2 tbsp 18g corn starch

Instructions

  • Combine all the ingredients and blend until the mixture is perfectly smooth. Then pour it into a saucepan. You may whisk everything directly in the pan if you prefer, but blending gives a finer, lump-free result with much less effort.
  • Place the saucepan over gentle heat and bring it just to a simmer. Stir constantly as it cooks, and allow it to thicken for about two minutes, until it reaches a rich, creamy consistency.
  • Divide the mixture between two jars or cups. Let it cool slightly, then place it in the refrigerator for at least four hours, or better still, leave it overnight to set properly.
  • Serve with fresh strawberries and a generous spoonful of cream.
