First, make yourself a lovely cup of espresso coffee and set it aside to cool completely. We need it to be nice and chilled for our cream mixture.
While the coffee is cooling, take your savoiardi biscuits (those are your lady fingers) and gently pulse them in your blender or food processor until they are a fine powder, like soft dust!
Now for the creamy heart of the truffle! In a mixing bowl, scoop in the lovely mascarpone cheese and the sugar. Pour in that cooled espresso and give it all a good mix until you have a beautiful, smooth cream.
Next, add those crushed lady fingers to the bowl. Grab your rubber spatula and stir everything together until it's just well combined. Don't worry, it will be a wonderfully thick texture, almost like cookie dough!
Take a small teaspoon of that mixture onto your fingers and gently roll it into a neat little ball. Place it on a plate and keep going until you've used up all the mixture, you should end up with about 10 sweet little truffle balls!
Tuck the truffle balls into the fridge to set for 1 hour. They will be delightfully soft inside, but if you prefer them a little firmer, just let them rest in the fridge for a bit longer.
Finally, pour your cacao powder into a small bowl. Drop the truffle balls in one at a time and roll them around until they are fully coated in that beautiful, rich powder.
