2Tbspchopped fresh parsley leaves

2Tbspfreshly squeezed lemon juice

Instructions
In a medium bowl, mix together the olive oil, shallot, garlic, parsley, rosemary, thyme, lemon juice, lemon zest, salt, and pepper.
Place the chicken in a gallon-sized Ziploc bag or large bowl, and pour in the olive oil mixture.
Marinate for at least 2 hours, or overnight, turning the bag occasionally. When ready, drain the chicken from the marinade. Preheat the grill to medium-high heat.
Brush the chicken with the remaining olive oil and season with salt and pepper to taste.
Place the chicken on the grill and cook, turning occasionally, until it's fully cooked and reaches an internal temperature of 165°F, about 10 minutes.
