Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 shallot diced
  • 3 cloves garlic minced
  • 3 Tbsp extra virgin olive oil divided
  • 2 Tbsp chopped fresh parsley leaves
  • 1 Tbsp chopped fresh rosemary
  • 1 Tbsp chopped fresh thyme leaves
  • 2 Tbsp freshly squeezed lemon juice
  • 1 Tbsp lemon zest
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • In a medium bowl, mix together the olive oil, shallot, garlic, parsley, rosemary, thyme, lemon juice, lemon zest, salt, and pepper.
  • Place the chicken in a gallon-sized Ziploc bag or large bowl, and pour in the olive oil mixture.
  • Marinate for at least 2 hours, or overnight, turning the bag occasionally. When ready, drain the chicken from the marinade. Preheat the grill to medium-high heat.
  • Brush the chicken with the remaining olive oil and season with salt and pepper to taste.
  • Place the chicken on the grill and cook, turning occasionally, until it's fully cooked and reaches an internal temperature of 165°F, about 10 minutes.
  • Serve right away.
