220gbanana mashed2.5 bananas
90glight brown sugar
50gcane/coconut sugar
80golive or neutral oil
65gapple saucesub mashed banana
1teaspoonvanilla extract
3tablespoonalmond/runny nut butter
1tablespooncinnamon
1/4teaspoonnutmeg
1/8teaspoonginger powder
180gplain flour
1/2rounded teaspoon baking soda
1/2teaspoonbaking powder

frosting:
110mldairy free whippable cream
100gvegan cream cheese
1teaspoonvanilla extract
50gicing sugar to taste
Instructions
Preheat your oven to 160°C fan and line an 8” square brownie tin with baking paper.
In a large bowl, mash the bananas until smooth. Whisk in the sugars, oil, nut butter, vanilla, salt, and apple sauce until well combined.
Sift in the flour, spices, baking soda, and baking powder, then fold gently—don’t overmix, we want it light and fluffy!
Pour the batter into the prepared tin and bake for about 28 minutes, or until a cake tester or toothpick comes out clean. Let it cool completely.
Frosting 🍥
While the cake cools, whip up the frosting! Using an electric whisk, whip the cream to stiff peaks. Add in vanilla and cream cheese, then gradually sift in the icing sugar. Chill in the fridge until ready to use.
Assemble & Serve
Spread the frosting over the cooled cake. For an extra treat, drizzle with Biscoff spread and sprinkle crumbled biscuits on top.
