Ingredients

  • 220 g banana mashed 2.5 bananas
  • 90 g light brown sugar
  • 50 g cane/coconut sugar
  • 80 g olive or neutral oil
  • 65 g apple sauce sub mashed banana
  • 1 teaspoon vanilla extract
  • 3 tablespoon almond/runny nut butter
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 180 g plain flour
  • 1/2 rounded teaspoon baking soda
  • 1/2 teaspoon baking powder
  • *pinch of salt

frosting:

  • 110 ml dairy free whippable cream
  • 100 g vegan cream cheese
  • 1 teaspoon vanilla extract
  • 50 g icing sugar to taste

Instructions

  • Preheat your oven to 160°C fan and line an 8” square brownie tin with baking paper.
  • In a large bowl, mash the bananas until smooth. Whisk in the sugars, oil, nut butter, vanilla, salt, and apple sauce until well combined.
  • Sift in the flour, spices, baking soda, and baking powder, then fold gently—don’t overmix, we want it light and fluffy!
  • Pour the batter into the prepared tin and bake for about 28 minutes, or until a cake tester or toothpick comes out clean. Let it cool completely.

Frosting 🍥

  • While the cake cools, whip up the frosting! Using an electric whisk, whip the cream to stiff peaks. Add in vanilla and cream cheese, then gradually sift in the icing sugar. Chill in the fridge until ready to use.

Assemble & Serve

  • Spread the frosting over the cooled cake. For an extra treat, drizzle with Biscoff spread and sprinkle crumbled biscuits on top.
