Ingredient Notes

Fudge Base

  • Peanut butter: creamy, natural peanut butter works best for a smooth texture and pure nutty flavor.
  • Dark chocolate: High-quality dark chocolate (70-85% cocoa) provides the structure and intense chocolate taste; use a sweeter chocolate if you prefer a milder flavor.

Optional Add-ins

  • Agave or maple syrup: A liquid sweetener used to balance the bitterness if using very dark chocolate.
  • Chopped nuts: Pistachios, almonds, or walnuts add a delightful crunch and extra nutty complexity to the smooth fudge.

Tips for Making the Best Chocolate Peanut Butter Fudge

  • Use Natural Peanut Butter: Peanut butter made from just peanuts and salt tends to blend better with the chocolate than stabilized versions with added oils.
  • Melt Gently: Melt the chocolate slowly in short bursts or over a double boiler to prevent it from scorching or seizing.
  • Line the Pan: Always line your container with parchment paper for easy removal once the fudge has set.
  • Adjust Sweetness to Taste: Taste the mixture before chilling; if the dark chocolate is too bitter, stir in the optional syrup.
  • Chill Thoroughly: Allow the fudge to set completely in the fridge or freezer to ensure clean, sharp cuts.

Serving Suggestions

  • Sea Salt Topping: Sprinkle flaky sea salt on top before setting to enhance the chocolate and peanut butter flavors.
  • Frozen Treat: Eat straight from the freezer for a firm, snap-like texture that melts slowly.
  • Dessert Topping: Chop into small cubes and sprinkle over oatmeal, yogurt, or vanilla ice cream.
  • Gift Wrapped: Place in small cellophane bags tied with ribbon for a quick and delicious homemade gift.
  • With Espresso: The bitterness of the dark chocolate pairs beautifully with a shot of hot espresso.

Ingredients

  • 160 grams ⅔ cup peanut butter
  • 125 grams 4.4 oz dark chocolate (70-85% cocoa, or sweeter if preferred)

Optional Add-ins

  • 20 grams 1 Tbsp agave or maple syrup (skip if using sweeter chocolate)
  • A small handful of chopped nuts e.g. pistachios almonds, or walnuts for extra crunch and flavor

Instructions

  • Start by chopping the chocolate into small, even pieces, or simply break it up by hand. Place the chocolate and peanut butter together in a heatproof bowl. Set the bowl over a saucepan with a small amount of gently simmering water and let everything melt slowly, stirring now and then, until the mixture is silky and well combined.
  • If you prefer a quicker approach, you may melt the chocolate and peanut butter in the microwave. Heat in short 20 second bursts, stirring between each round, until smooth and fully melted.
  • Once the mixture is glossy and uniform, stir in the syrup if you are using it, followed by any extras you like. Pour the warm mixture into a silicone mold, a loaf pan lined with parchment paper, or any container you have on hand. Smooth the surface with a spatula and, if desired, sprinkle a few nuts or chocolate pieces over the top.
  • Place the pan in the refrigerator or freezer and let it set for one to two hours, until firm to the touch. Once set, cut into neat squares and serve.

Notes

  • To adjust the texture, you can change the balance between chocolate and peanut butter. A higher amount of peanut butter will give a softer, creamier result.
  • The thickness of the fudge depends on the size of the mold or pan you choose. Thinner layers will set more quickly, while thicker ones may need a bit more chilling time.
