Tips and Frequently Asked Questions:

What Type of Apple to Use? You can pick your favorite apple variety. Pink Lady for sweetness or Granny Smith for a touch of tartness works well. Other sweet options include Jazz, Gala, or Fuji.

How to Achieve the Best Crunchy Crumble Topping? Ensure you use rolled oats (not quick oats), soften the butter to room temperature, and use your fingers to create a crumble mixture with a mix of small and large chunks, not too fine.

My Crumble is Browning Too Quickly: Simply place a sheet of foil loosely over the top for the remaining cooking time.

Can I Swap Out the Apple for Something Else? Absolutely! You can explore our apple and raspberry crumble cake version, or use any canned or sliced fresh fruit you prefer. Lemon curd is also a tasty alternative.

How to Store This Cake?

  • Room Temperature: Keep the cake in an airtight container at room temperature for up to three days.
  • Freezing: Alternatively, if you want to store it for a longer period, wrap it well (to prevent freezer burn) and freeze it for up to one month.

How to Reheat Apple Crumble Cake? If you’d like to warm it up after it has cooled, you can do so in the oven at a low temperature or at 50% power in the microwave. It’s delicious with cream, ice cream, or custard. Enjoy!

Ingredients

For the Cake:

  • 250 grams of butter at room temperature
  • 150 grams 1 cup of brown sugar
  • 2 eggs
  • 2 tablespoons of golden syrup
  • 2 teaspoons of vanilla extract
  • 120 grams about 1/2 cup of milk
  • 225 grams 1 1/2 cups of self-raising flour
  • 5 apples peeled and thinly sliced

For the Crumble:

  • 125 grams 1 cup of plain flour
  • 75 grams 1 cup of rolled oats
  • 100 grams of softened butter
  • 80 grams 1/2 cup of brown sugar

Instructions

  • Preheat your oven to 160 degrees Celsius (if it has a fan, use that setting).
  • Prepare a 23cm round cake tin by greasing it and lining it with baking paper.
  • In a bowl, combine the butter and brown sugar. Use an electric beater on high speed until it's light and fluffy.
  • Add the eggs, golden syrup, vanilla essence, and milk to the mixture. Keep using the beater on low speed until everything becomes smooth and creamy.
  • Sift in the self-raising flour and mix on low speed just until it's combined. Don't overmix.
  • Spread half of this cake batter into your prepared tin.
  • Place half of the apple slices in a thin layer on top of the batter.
  • Now, spread the remaining cake batter over the apples.
  • Top it off with the remaining apple slices. Set it aside.
  • In another bowl, use your fingers to mix together the plain flour, rolled oats, butter, and sugar until you get crumbs. Don't make them too fine.
  • Sprinkle these crumbs over the cake and press them down lightly.
  • Put the cake in the oven and bake for around 60 minutes. Check it by inserting a skewer into the middle; it should come out clean. It might need a bit more time, depending on your oven.
  • After baking, let it cool in the tin for 30 minutes before transferring it to a wire rack to cool completely.
  • Enjoy your delicious Apple Crumble Cake!
