Chocolate Banana Bread
Rich double banana chocolate bread full of chocolate and banana flavor! Moist, decadent, and so simple to make, you’re going to make it all the time!

Yield: 1 Loaf
INGREDIENTS
2 cups (250g) of All-Purpose Flour
1/2 cup (42g) of Cocoa Powder (Unsweetened)
1/2 cup (100g) of White Sugar
1/2 cup (100g) of Brown Sugar
3 tsp of Baking Powder
1/2 tsp of Salt
4 Medium Ripe Bananas (14oz/400g peeled weight)
1/2 cup (120ml) of Soy Milk*
3 Tbsp of Coconut Oil
1 Flax Egg (1 Tbsp of Ground Flaxseed Meal and with 3 Tbsp of Hot Water)
1 cup (175g) of Vegan Chocolate Chips*
INSTRUCTIONS
Preheat the oven to 350°F (180°C).
1. In a mixing bowl, sift the flour and cocoa powder and then add the white and brown sugar, baking powder, salt and combine them together.
2. In the blender, add the bananas, soy milk, and coconut oil and blend until smooth, not over-blended, or until bananas start to oxidize.
3. By adding 3 Tbsp of hot water to 1 Tbsp of ground flaxseed meal in a bowl, start preparing your flax egg and leave it to become gloopy for a minute.
4. Over the dry ingredients, pour the mixed banana mixture and then add in the flax egg and mix till properly mixed. The batter’s going to be thick.
5. Add around 3/4 of the chips of vegan chocolate and fold in. Keep about 1/4 of them aside and put them on top of the loaf.
6. Spray a 9-5 loaf pan with non-stick spray and then line it with parchment paper to hang the parchment paper over the sides so that you really can easily lift it out of the loaf pan using the parchment paper once the banana bread is baked. Move the batter and smooth it with the back of a spoon from the mixing bowl to the loaf pan. To the top, add the remaining chocolate chips.
7. Bake for 60 min or until a toothpick is cleanly inserted into the center (melted chocolate is okay but the wet batter is not).
8. To lift the banana bread out of the loaf pan, use the parchment paper and put it on a wire cooling rack to cool before slicing.
NOTES
If you like, you could use almond milk instead of soy milk.
If you can’t get chocolate chips, you can choose any vegan chocolate and then just chop it up into chunks. When you do this, weigh it for the correct quantity.
